Sous Chef Your responsibilities Assisting the Executive Chef and Executive Sous Chef: Act as a key support, helping manage kitchen operations, staffing, and maintaining high menu quality.
Lead the kitchen team in the absence of the Executive Chef or Executive Sous Chef.
Kitchen Operations: Ensure smooth kitchen operations during service, maintaining food quality and presentation.
Supervise and coordinate kitchen activities to meet standards.
Team Leadership: Supervise and motivate kitchen staff, providing training, guidance, and support to ensure adherence to quality standards and safety protocols.
Quality Control: Conduct tastings and inspections to maintain high standards in taste, appearance, and consistency.
Ensure dishes align with the club's culinary vision and standards.
Inventory and Ordering: Manage stock levels, order ingredients, and track inventory to ensure optimal supply without excess.
Coordinate with suppliers to maintain ingredient quality and freshness.
Menu Development: Collaborate with the Executive Chef and Executive Sous Chef on menu development, including suggestions for seasonal and creative dishes aligned with guest preferences.
Health and Safety Compliance: Ensure compliance with sanitation, hygiene, and safety standards, including proper food handling and storage.
Station Oversight: Supervise various kitchen stations as needed, ensuring smooth and coordinated food preparation.
Problem Solving: Address and resolve issues that arise during service, such as ingredient shortages or equipment malfunctions, to maintain kitchen efficiency.
Communication: Maintain open and clear communication with kitchen staff, the Executive Chef, Executive Sous Chef, and other departments to ensure smooth operations.
Our requirements Proven experience as a Sous Chef or Senior Chef in a high-end or high-volume kitchen.
Culinary degree or equivalent professional training is preferred.
Strong leadership skills, with experience training and managing kitchen staff.
Exceptional knowledge of cooking techniques, ingredient quality, and presentation.
Excellent problem-solving skills, a proactive approach, and ability to perform under pressure.
Flexibility to work evenings, weekends, and holidays as required.
Frequently required to lift or move up to 50 pounds.
Ability to walk, climb, kneel, and crouch as needed in a kitchen environment.
Visual abilities required include close vision, colour vision, and depth perception.
