About The Role Duties and Responsibilities of the Role: Oversee and manage inventory levels for food, beverage, and consumables, ensuring accurate stock records and par levels are maintained using Procure Wizard.
Conduct regular stock audits and implement loss prevention strategies to minimize waste and ensure cost control.
Manage supplier relationships, ensuring timely and accurate deliveries, handling returns, and resolving any stock discrepancies.
Work closely with suppliers to develop a circular economy that promotes sustainable resource use, focusing on minimizing waste and reusing materials where possible.
Ensure proper storage, rotation and safety of stock to meet health and safety standards, particularly with high-value and perishable goods.
Manage the requisition of stock process, ensuring that all stock requests are fulfilled promptly and accurately, with proper authorization procedures in place.
Oversee the maintenance and cleanliness of keg rooms to the highest standards.
Ensure proper handling, storage, and dispensing of kegs in compliance with hotel and regulatory standards.
Implement a scheduled program for regular clean-outs and maintenance of storage areas, ensuring cleanliness and organization at all times.
Ensure back-of-house equipment is regularly maintained and serviced to avoid operational downtime and meet safety standards.
Conduct internal audits of stock and back-of-house operations to ensure compliance with the hotel's procedures and identify areas for improvement.
Implement corrective actions based on audit findings and ensure ongoing monitoring of stock management and operational efficiency.
Monitor stock levels in keg rooms and ensure availability to support service without interruption.
Oversee the cleanliness and organization of all staff areas and the canteen, ensuring these areas are well-maintained and stocked with necessary supplies.
Ensure staff facilities are conducive to a healthy and productive work environment.
Serve as the point person for the Aloha POS system, handling all software updates, price changes, and menu edits in a timely and accurate manner.
Train food and beverage staff on proper use of the POS system and provide ongoing support for troubleshooting issues.
Liaise with the IT department or external support for any advanced POS system configurations or upgrades.
Lead, train, and develop the back-of-house team, ensuring a high level of performance and productivity.
Foster a collaborative relationship between the front and back of house teams to ensure seamless food and beverage service.
Ensure all operations within the back of house meet the hotel's stringent standards for health, safety, and hygiene.
Regularly review and improve operational processes to ensure efficiency while maintaining luxury service standards.
Stay updated with industry regulations and ensure the hotel's compliance with all applicable food safety, hygiene, and liquor licensing laws.
Monitor and ensure efficient waste management practices are in place, including the segregation of waste at all key points in the waste journey, in compliance with local environmental regulations.
Liaise with all departments to ensure seamless operations throughout the hotel.
Key Skills & Competencies: Strong ability to prioritize tasks and manage time effectively to ensure smooth back-of-house operations.
High level of accuracy in stock control, keg room management, and POS system updates, maintaining luxury service standards.
Competence with the Aloha POS system and Procure Wizard or similar software with the ability to troubleshoot and make updates efficiently.
Strong understanding of cost control and budgeting in relation to stock management and minimizing waste.
Requirements for the role: Strong knowledge of inventory and stock control processes, particularly in the food and beverage sector.
Experience working with Aloha POS and Procure Wizard or similar systems.
Exceptional organizational, time management, and leadership skills.
A meticulous eye for detail and commitment to maintaining high standards of cleanliness, safety, and service.
Strong problem-solving abilities, with the ability to act swiftly and efficiently.
Knowledge of local health and safety regulations related to food and beverage operations.
