Responsible to: General Manager/Managing Director Job Purpose: To ensure the smooth and efficient running of the food & beverage operations and to promote a positive image to both customer and colleagues in relation to service and quality of food and beverages Main Responsibilities: Day to day running of the Food & Beverage Outlets Take control and responsibility for the Waterfront Bar & Brasserie, L'Escale Restaurant, 52 @ The Bay and Room Service.
Take every opportunity to maximize revenue.
Lead a team of Managers, Assistant Managers, Food & Beverage Supervisors and Food & Beverage Assistants to ensure the highest levels of Customer Care are practiced at all times.
To assist and carry out training as required and to document the same.
To be responsible for the day to day queries, complaints, and issues that arise in the Bar, Brasserie & Restaurant.
To ensure cash/vouchers and all forms of payment are handled in a secure and responsible manner.
To deal with all complaints in a courteous and efficient manner and inform the senior manager.
Attend the weekly Head's of Department meetings Assist with recruitment and selection for Food & Beverage outlets Assist Managers with Performance Management Management of Weekly Rosters Maintain and audit hygiene levels Maintain and audit food quality levels with Executive Head Chef To ensure that reasonable care is taken for the Health and Safety of yourself, other employees, guests and any other persons on the Hotel premises.
To report and where possible, take action on incidents of accidents, fire, loss or damage.
To carry out all Managerial duties as per the agreed standards.
  Your normal working week will be 5 days over a 7-day roster.
The weekly roster includes weekend work.
Requirements: A Minimum of 2 years experience at Manager level in a 4* Hotel Possess Strong Leadership qualities Excellent communication, organisation & people management skills Ability to train new & existing staff Have an excellent knowledge of Food and Beverage & a strong eye for detail Possess the ability to perform under pressure Fluent in spoken & written English Availability to work 5 over 7 days for both opening and closing shifts A strong level of HACCP Knowledge of Budgeting and Rostering Why work with us?
